Pancake Day! The vegan way...
This Pancake Tuesday, dig in and indulge in a fantastic vegan treat with these delicious Vegan Banana Pancakes. Simple, easy and as good as (I think better than) the classic flapjack you might be used to.
Very easy to make. I used approximately:
2 cups organic rolled oats
1/2 cup spelt flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp pink Himalayan salt
2 medium sized ripe bananas
2 large apples (I used jonagold)
Oat milk (could use rice milk or almond milk or soy milk)
Peel the apples and bananas and dice into large chunks. Pop the fruit and the dry ingredients and milk of choice into your blender and blend on high speed until you obtain the consistency you prefer. I made these a little thicker, but you can adjust the ingredients to obtain the thickness you prefer. That's it! So delicious topped with freshly pureed raspberries, or jam - or even maple syrup.
These are a delicious and vegan-friendly alternative to regular pancakes. Who said being vegan meant that you had to give up your favourite treats? Not me - not ever!
