Pancake Day! The vegan way...

This Pancake Tuesday, dig in and indulge in a fantastic vegan treat with these delicious Gluten Free Vegan Banana Pancakes. Simple, easy and as good as (I think better than) the classic flapjack you might be used to.

Very easy to make. I used approximately:

2 1/2 cups of plain gluten free flour

1 tsp gf baking powder

1 tsp baking soda

1/2 tsp pink Himalayan salt

1 cup coconut sugar

2 medium sized ripe bananas

2 large apples (I used jonagold)

Soy milk (could use rice milk or almond milk pr hazelnut or hemp or oat!)

Blend all the dry ingredients. Peel the apples and bananas and dice into large chunks. Use a hand blender to puree the fruit - mixed together. Add the fruit to the dry ingredients and add milk of choice until you obtain the consistency you prefer. I made these a little thicker than I normally would - about the consistency of yogurt. That's it! So delicious topped with freshly pureed raspberries, or jam - or even maple syrup.

These are a delicious and vegan-friendly alternative to regular pancakes. Who said being vegan meant that you had to give up your favourite treats? Not me - not ever!
